Caprese Quiche

Bruschetta…but make it a quiche.
The flavours of Italy married to the artistic cuisine of France. This delightful quiche recipe made with organic ingredients is sure to satisfy any lunch crowd. Meet your new go-to for the perfect potluck meal, school lunch, or Saturday morning brunch addition! Happy baking!
  • 1 homemade pie crust, chilled
  • 6 organic eggs
  • 1/2 cup organic cream
  • 1/4 cup organic milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch of nutmeg
  • Pinch of dried oregano
  • 2 organic tomatoes, sliced thin
  • 3 sprigs of fresh basil
  • 1 fresh buffalo mozzarella ball, slice thin
  • 1 tbsp butter
Directions:
  1. Preheat oven to 375°F.
  2. With a rolling pin, or cold wine bottle, roll out the chilled pie crust and press into a 9" pie plate, cut off any excess dough and set aside.
  3. Place the pie plate into the freezer for about 10 minutes until the dough is firm.
  4. Cover the chilled pie dough with parchment paper and place pie weights or baking beans on top.
  5. Blind bake the pie crust for 15 minutes.
  6. Remove the parchment and baking weights, lower temperature to 350F and bake again for 5 minutes. Set aside to cool.
  7. In a large bowl, whisk together eggs, milk, salt, nutmeg, and pepper. Strain the mixture to remove any lumps. Add dried oregano and whisk again.
  8. Place sliced mozzarella, tomato, and basil into the partially baked pie crust until covered.
  9. Pour the egg mixture over top.
  10. Dollop the butter into a few pieces all over the egg mixture.
  11. Bake for 35-40 minutes until the centre is completely set. Let cool for 5-10 minutes before slicing and serving; for an even tastier quiche, allow to sit overnight and eat the next day!
  12. Enjoy!

Parsley Chimichurri

Say chimichurri 10 ten times fast. Ok, you’re right its not that hard. Neither is this amazing recipe which will immediately transport you to South America. What is chimichurri? Well, if you have never tried the best condiment ever, simply put, it is an Argentinian sauce that packs a flavourful punch; best enjoyed with barbecued meats or veggies.

There is a great debate on who’s Abuela makes the best chimichurri, but I am sure they will all agree on this one.

Let's get saucy:
  • 1 cup fresh flat-leaf parsley leaves
  • 1 small fresh red chili (optional: this will make it very spicy)
  • 2 tablespoons fresh oregano leaves
  • 3 to 4 garlic cloves
  • 3 tbsp red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon chili flakes
Directions:
  1. Place the parsley, fresh oregano, garlic, and red chili (if using) in a food processor and pulse several times.
  2. Transfer to a small bowl. Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust salt to taste.
  3. Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a week or two.
  4. Enjoy at your next family BBQ!

Oreganita

One of those don’t knock it until you try it type of recipes.

Think of yourself sitting on a patio on a Greek island by the beach, you hear the local musicians playing Bouzouki in the streets, and serotonin is flowing free. The only thing that makes this moment better is the amazing cocktail in your hand, the *drumroll please* Oreganita, your new fave drink.

Here’s what you will need to bring that joy to your own kitchen:

First, you will need to connect your phone to your nearest bluetooth speaker and play this song:
Ok, you’re ready to get started.

  • 2 sprigs fresh oregano
  • 1.5 top-shelf ouzo or tequila (go for ouzo if you like licorice, go for tequila if you’re in for something classic)
  • 2 tbsp raw honey, melted.
  • 1/2 lemon, juiced
  • Cocktail shaker
  • Ice
Directions:
  1. Put one scoop of ice in your cocktail shaker and shake up with all ingredients.
  2. Strain into a chilled cocktail glass
  3. Enjoy!
