Missing the East Coast? So are we. The summer season in Atlantic Canada is not to be missed. Beautiful sunsets over the water, driving around the Cabot trail and eating delicious seafood, that tastes oh so fresh. Since traveling is still not an option, we figured out how to bring a little piece of the East Coast home to you for National Lobster Day.

Lobster rolls are a very special and staple summer dish from Nova Scotia. Best thing about it is, it’s incredibly easy to recreate with little ingredients needed. Using Chef’s Vault lobster supplied by Gidney Fisheries from Nova Scotia, you get that fresh Atlantic taste straight in your kitchen!

Ingredients:

  • 6 Chef’s Vault lobster tails, shell-off
  • 6 fresh brioche buns
  • 2 tbsp of soft butter
  • 2 tbsp mayonnaise
  • ¼ cup diced celery
  • ½ cup fresh herbs (of your choice), roughly chopped
  • 2 garlic cloves minced
  • 3 large handfuls spinach or lettuce
  • Zest of 1 lemon
  • Kosher salt, to taste

Instructions:

  1. Thaw the lobsters in the fridge overnight.
  2. Melt two tablespoons of butter with 2 garlic cloves minced.
  3. Sauté the whole lobster tails on medium heat until they become firm to the touch and change colour, you are looking for an opaque white with bright red. 
  4. Once cooked, remove lobster from pan and drizzle butter and garlic over the meat.
  5. Let the tails rest to room temperature, then roughly chop lobster meat into bite-sized pieces. Set aside.
  6. Finely dice celery stalks.
  7. Butter buns on both sides and grill them on a frying pan. Toast the outside of the brioche buns until golden brown.
  8. In a bowl, mix the lobster meat, mayonnaise, lemon zest, and celery. Add fresh herbs and salt to taste.
  9. Open the grilled bun and place 1/2 oz spinach per bun. Spoon the lobster mixture onto the center of the brioche bun. Squeeze lemon juice on for additional flavour.

Viola! Super flavourful and tasty. Traditionally, lobster rolls are served with homemade french fries or potato chips. Potato salad is another classic that tastes super delicious with the rolls. To complete the experience, pair with Tidal Bay or your favourite wine.
